Mediterranean Rice Salad

Here’s What You Need:

Serves 4

½ jar Skinny Dinner Starter: Superfood Italian
2 cups cooked brown rice*
Handful of kalamata olives
2 small tomatoes, chopped
1 TBS of extra virgin olive oil
Handful of feta, chopped roughly
½ of a cucumber, diced
½ of a lemon
Salt + Pepper

 Here’s What You Do:
Stir the Skinny Dinner Starter Superfood Italian, olives, tomatoes, feta and cucumber into the rice and toss with the juice of the lemon and  the extra virgin olive oil. Generously season with salt and pepper to taste. Serve warm, cold or at room temperature. (You can use the Uncle Ben’s microwaveable brown rice to save on time.)

 Kid Tip:
Dice the veggies and cheese very small for the kids. You can also make a wrap for them using a pita or a whole grain tortilla and a dash of Greek Yo
