Baked Italian Pasta

Here’s What You Need:

Serves 4
½ jar Skinny Dinner Starter: Superfood Italian
6oz penne or similar pasta
15oz low-fat ricotta
15oz diced organic tomatoes (or equivalent in marinara)
 1 egg
Salt + Pepper
Low-fat shredded mozzarella

Here’s What You Do:
Cook pasta al dente according to package directions. Preheat oven to 425. Mix the ricotta with 1 egg and Skinny Dinner Starter. Drain the tomatoes, reserving 1 TBS. Stir tomatoes and the 1 TBS of juice into the pasta. Mix in the ricotta mixture to coat. Top with cheese. Bake covered for 10 minutes and then uncover for 3. Broil for about 2 minutes or until it starts to bubble. Season with salt + pepper (and red pepper flakes if you wish) **You can also add in sautéed vegetables or browned meat to this dish too.

Pasta is usually an easy sell with kids. You can also add a big dash of parmesan
