10 Minute (Delicious!) Flatbread

Here’s What You Need:

Serves 4
½ jar Skinny Dinner Starter: Superfood Italian
3-4 flatbreads (I like Target Archer Farms Garlic Naan)
Grated parmesan or pecorino Romano (1 TBS per bread)
Extra virgin olive oil
Ripe tomatoes, sliced (About ½ per flatbread)
Fresh mozzarella* (About 1 ball)
Salt + Pepper
Red pepper flakes (optional)

Here’s What You Do:
Preheat oven to 400. Spread Skinny Dinner Starter: Superfood Italian on bread. Add tomatoes and season with salt and pepper. Sprinkle parmesan over the top of the pizza evenly. Add in pieces of mozzarella sporadically. Drizzle with EVOO. Bake for 6 minutes and then turn on broil and broil for 2-3 minutes, turning every minute or until the cheese is starting to brown and is bubbly. Sprinkle with S+P and red pepper if  you like. *You can sub in shredded. Use it sparingly.

Kid Tip*:
