1 jar Dinner Starter: Healthful Mexican
1 lb of very lean ground beef (like Laura’s)
4 Whole wheat tortillas (larger size)
Handful of baby spinach, cut into strips
Shredded cheese (Low-fat cheddar or Monterrey Jack work well)
Optional Toppings: Tomatoes, plain Greek Yogurt, jalapenos, Avocado slices
Here’s What You Do:
Heat a pan to medium high heat. Add the ground beef, breaking it up with yours spoon. Cook until browned slightly then drain if necessary and return to the pan with Dinner Starter as well as ¼ cup of water. Bring to a boil and then lower to a simmer for about 8 minutes or until the sauce has thickened. To make the quesadilas: take a tortilla and add the meat to one side, top with spinach, and about 1-2tsps of cheese and folder over. Cook in preheated panini maker* for 4-5 minutes. Add toppings and serve.
What kid doesn’t love finger food! Alternately you can also add the meat mixture to whole wheat tortilla chips, top with spinach (cut very small and then cheese) Microwave for 45 seconds to create nachos.
*If you don’t have a panini maker, don’t worry! You can make this on the stove in a grill pan over medium high heat. To achieve the grill marks, simply add a heavy pan to the top of it. (You may want to spay the pan with non-stick ahead of time.)
