Roasted Peppers & Sausage

sausage and peppersHere’s What You Need*:

Serves 4
½ jar Skinny Dinner Starter: Superfood Italian
½ of a turkey kielbasa ring
2 bell peppers (different colors)
2 TBS of extra virgin olive oil
1 small onion
Salt + Pepper

Here’s What You Do:
Preheat the oven to 450. Slice the kielbasa. Cut the peppers and onion into short, fat strips and add the kielbasa and pepper and onion mix to a big ziplock bag. Stir in 2 TBS of extra virgin olive oil and seasonwith salt and pepper. Roast for about 15 minutes, tossing at least once. (Or until the mixture softens and starts to very lightly brown. ) Stir in the Skinny Dinner Starter: Superfood Italian.

*For a complete meal, serve over couscous, potatoes (mashed or roasted) or cooked rice.

Kid Tip:
Serve the sausages separately for the kids with organic ketchup to dip. Chop the peppers and onions very small and mix them with the rice or potatoes.
