Italian Panini

Here’s What You Need*:

Serves 4
½ jar Dinner Starter
8 pieces of hearty bread
2-3 small tomatoes, sliced
Extra virgin olive oil
Fresh mozzarella or provolone cheese (About 1 slice per sandwich)
Salt + Pepper

Here’s What You Do:
Preheat your panini maker. (You can also use a grill pan sprayed with non-stick and heated over medium-high heat) Spread the Skinny Dinner Starter: Superfood Italian on each slice of bread. Drizzle the tomatoes with extra virgin olive oil and season with salt and pepper. Form sandwiches by adding sliced tomatoes and cheese to one piece of bread and layering it with a top piece. Brush one side of the sandwich with olive oil lightly and add to the panini maker for 4-5 minutes total. If using a grill pan, make the sandwich like a grilled cheese, but put a heavy small pan on the top of it, so you get the great grill marks.

Kid Tip*:
If  you think your kids will turn their noses up at tomatoes and “white cheese”, then swap in ham and cheddar, leaving in the Skinny Dinner Starter: Superfood Italian. You will still get all the great benefits of the “kale spread” with none of the fuss.
