Creamy Chicken Enchiladas

Serves 4

1 jar Dinner Starter: Healthful Mexican
.75lb Chicken tenderloins, cubed (Seasoned with salt and pepper)
Olive oil
Two wedges Laughing Cow {Queso Fresco & Chipotle}
Shredded Mexican cheese blend
(4) Whole wheat tortillas
½ cup frozen corn, semi-defrosted
Optional Toppings: Cilantro, tomatoes, plain Greek Yogurt, jalapenos

Here’s What You Do:
Preheat the oven to 350. Heat a pan drizzled with extra virgin olive oil over medium high heat and then add the seasoned chicken, cook for 2 minutes and flip. Add in the Laughing Cow and cook 2 more minutes. Stir in the corn. Spray a small baking dish with non-stick and divide the chicken mixture among the tortillas. Please seam side down on the dish and then cover with 1 jar Skinny Dinner Starter: A la Mexican. Sprinkle shredded cheese over the top and bake for 15-20 minutes or until it turns bubbly and golden brown. Season with salt and pepper to taste and add optional toppings.
