Holy cow.
It is so true what they say about how one event can shape and change so much -in the blink of an eye.
That is how I feel like winning the Hottest Kitchen Entrepenuer Challenge has been for me.
It has been a complete whirlwind.
I. Am. Loving. It.
The red tape? Not so much, but all the other fun stuff for sure. (Even the juggling of two jobs!)
I have met incredible people I would normally have never had the chance to connect with, and I feel like the Skinny Dinner Starter is headed in the right direction. (Meaning to your grocery store shelf!!!)
Since life is particularily insane righ now I have been more desperate than ever for quick, healthy, kid friendly dinners.
These Parmesan Dusted Chicken Fingers take no time at all, are finger friendly for the little ones, yet taste sophisticated enough for moms too.

I hope that when life gets a little bit crazy, you pull this one out of your own pocket!

Disclaimer-I realize that I did not win the lottery and I am not a Bethenny Frankel, but in my own little world this has been such a fun ride!

Here’s What You Need:
1-1.5lbs of chicken tenderloins
Seasoned salt (I prefer Penzey’s)
Black pepper
Grated parmesan
Extra virgin olive oil

Here’s What You Do:
Season one side of the tenderloins with salt and pepper and preheat a pan over medium high heat and then drizzle with EVOO. Add the chicken seasoned side down. Cook for 3-4 minutes and then flip. Use a spoon to press in parmesan into each piece of chicken and cook for 2-3 minutes more and then flip for about 1 more minute to set in the parmesan. (Alter times so you don’t over or undercook as necessary!)
That’s it. It’s that easy.
*Don’t crowd the chicken, so you may need to cook it in two batches.
*I served this over a bed of baby spinach with strawberries and blue cheese dressing as a dinner salad for myself.
Kid Tip:
Cut the tenderloins in half so they are friendly for little fingers! Serve with honey mustard or organic ketchup for dipping.
