August 1st…

 Oh how I dread you.

 Summer hours officially come to an end and the onslaught of fall craziness hits me like a semi.

I am gazing whistfully out at the lake hearing the birds dash through the summer blue sky, knowing I may not feel the warm air from my computer today.

How fun is that?!
I guess working in the schools for ten years I should know–this is the life, and of course,  

I am grateful for the summer slowdown. It has been an amazing one.
I also know that once I am back in full force training teachers and talking about Spanish, I will be once again in my element.

For now, I am going to try and dine al fresco and enjoy the final days of my blessed summer…

Fire up the grill and make these Maple & Mustard Glazed Pork Chops

 

Here’s What You Need:

4 small boneless pork chops
Sauce
4 TBS of maple syrup (The real kind only here!)
2 TBS of dijon mustard
4 TBS Extra virgin olive oil (Plus extra for pork)
Salt + Pepper

Here’s What You Do:
Heat the grill or the grill pan to medium high. Whisk together all the ingredients for the glaze and then divide into two. Brush the pork lightly with EVOO and season with salt and pepper. Add 1/2 of the glaze to a small sauce pan and heat until warm. Grill the pork  for about 12 minutes (or until done.)*, turning once. Baste the pork with the remaining sauce the whole time you are grilling. Spoon the warmed sauce from the sauce pan over the pork and serve.

Kid Tip:
Make it a fun Southern style meal with Simply biscuits, corn on the cob an watermelon. Cut the pork into small pieces for the kids.
