What the heck am I doing?

I have to wake up in five hours to go to the airport with two little rambunctious boys, I have loads of “real work” emails and projects piled up on my desk, and I have a house that could use a little (okay a lot of) attention. Oh wait-Did I fail to mention that I am in a food contest next week that is being judged by some of the biggest names in food here in Milwaukee.

But, here I am typing about chicken wings.

This is what happens when I have way too many things to do.

I step up my avoidance tactics.

Anyway…

I have made these Chipotle Apricot Chicken Wings three times, but we  at them up so quickly I never got to snap a picture. I finally did this time, because I took a picture before anyone caught wind of them.

They are good. I promise ya.

Here’s What You Need:
1.25-1.5 lbs chicken wings, trimmed ( I prefer using Smart Chicken’s!)
4 TBS apricot preserves*
2 TBS extra virgin olive oil
1-2 tsps dried chipotle*
2 TBS worcestire
1 TBS honey
1/2 tsp garlic, minced
1 TBS dijon
1/4 cup chicken broth

Here’s What You Do:
Mix ingredients through dijon together adding the wings. Marinate at least 30 minutes or overnight. Preheat the oven to 400. Remove the wings and add them to a baking sheet covered in parchment paper. Add the marinade to a small pot and broil to a boil over medium high. Add the broth slowly as needed so that the sauce is syrupy. Bake the wings for  20 minutes. Remove from the oven and cover them with the with the sauce. Lower the oven to 350 and bake for 15-20 minutes more. Delicioso!
*Feel free to sub in orange or another similar jam here.
* 2 tsps of chipotle was pretty spicy, so feel free to add less. See the kid tip below.

Kid Tip:
In general kids love wings! So, before you add the chipotle set a side a small amount of marinade for your kids portion of  the wings or leave some plain with a dash of evoo and salt and pepper.
