In the meantime…I wanted to share with you all a formula my mom gave me for quiche way back in the day. I love anything that has a formula. ~ You can simply plug in whatever ingredients you have on hand and that is exactly  how this Quiche Formula works. You can use the same ratios and make a Turkey Bacon, Swiss, and Asparagus Quiche or a Ham, Cheddar, and Tomato one, or whichever combination you come up with. Here I used asparagus, sharp cheddar (and Laughing Cow Creamy Swiss), tomatoes, a few slices of bell pepper and spinach. (I love veggies, as you can tell, but you can use deli ham or Canadian or turkey bacon too.)

So…The pre-made crusts are not very skinny, but I decided to still post this because living a balanced lifestyle is also about eating all the things you like, just in moderation. So have a small piece or at Easter Brunch, a grande one, and enjoy this splendid Spring day!

Here’s The Formula: (For 1 quiche, easily doubled)
3 eggs
1 cup of milk (ff)
1/4 cup of cheese
Seasoning (I love Penzey’s Country French Vinaigrette)
Fresh veggies
Extra virgin olive oil
1 pre-made pie crust (found in the freezer section)
Salt + Pepper
*I added 2 wedges of Laughing Cow Creamy Swiss (makes it super creamy)

Here’s What You Do:
Preheat the oven to 375. Preheat about a tsp of extra virgin olive oil into a pan over medium high. When it is warm, add your veggies in stages. (Ie: Those that take longer to cook first, like onions, and those that go really quick, like spinach). You will want to season them at this point too. You can still leave them a bit “al dente” as this will get baked. Whisk the eggs, seasoning, milk, and the wedges of Laughing Cow together until mixed. Pour the cooked veggies into the crust, followed by the cheese, and then the eggs. Season again and bake for 45-55 minutes. Season with S+P to taste.

We had this for DINNER last night along with the hashbrown version of the Cheesy Potatoes and roasted asparagus. Yum! Andy even said, ” I really liked this. Someting totally different. ”

Kid Tip:
Egg pie, Egg pizza, sometimes it is all in the marketing! If that doesn’t do the trick, you can always use the same ingredients and make scrambled eggs pretty painlessly or like me, serve turkey hotdogs and asparagus “fries”.
