I absolutely love hearing my soon to be four year old chatting away in the backseat. He says the funniest things about his day, comments on what he sees out the window, and often sings and dances with his little brother. I love looking in the rearview window and seeing his little smile looking back at me. Last week as we were driving home from the airport he stared reciting from the book Green Eggs and Ham by Dr. Seuss. “Aha! Thank you for the great idea,” I exclaimed. Green Eggs and Ham + St. Patrick’s Day=Great combination. Add a little Organic Girl Spinach and Laughing Cow Creamy Swiss and you have a perfect Skinny Mommy breakfast. I just made this Monday morning, and it was in deed just as great as I expected–Thanks little man for your first contribution to SM!
Here’s What You Need: (For 1)
1 egg whisked with skim milk
1 wedge of Laughing Cow Creamy Swiss
Handful of Organic Girl baby spinach cut into strips
1 pc of lean deli ham, diced
Seasoning (I used Penzey’s Country French Vinaigrette)
Here’s What You Do:
Preheat a pan coated with organic non-stick over medium. Add the spainch to one side and the egg to the other. Once the egg begins to scramble and the spinach begins to wilt, combine them together. Season and add in the ham and the cheese. Keep moving around until scrambled they way you like it. Season with salt and pepper to taste. (My friend Kim told me how Laughing Cow cheese is great in eggs. She was right –this is sooo creamy it’s hard to belive it is skinny. But, it is!)
Bust out the book and get your kids involved in making this. You can even add a bit of green food coloring if you are so moved. I am yet to be even a bit crafty, but am hope food coloring will be my first step
