I have a dirty little secret.

 Yep.

I love sausage biscuits from McDonalds.

There is something about the salty, flaky combination that gets me every time. They are not one iota skinny. (Did I need to tell you that?!) So…I pretty much only afford myself the luxury of this sodium and fat laden “treat” when I am at the airport. (Frankly they go well with the brainless gossip magazines that I also pick up at the airport ;) !)

I came up with these Better For You Biscuit Breakfast Sandwiches on a random Saturday morning. You know what Andy said when he tried it?

“These literally melt in your mouth.”

Woo hoo! I will take it. I think I may even like them more than the Sausage Biscuit. Give these a try at your house and let me know what your fam thinks.

Here’s What You Need: (4 Sandwiches)
4 eggs (Preferably organic)
1 package Simply Biscuits (By Pillsbury)
1 handful of baby spinach, chopped
Seasoning (I like Penzey’s Taste of Paris)
2 wedges Laughing Cow Cheese (Mozzarella Sundried-tomato and Basil)
Salt and Pepper
FF Milk
Best Life Spread (or other healthy butter alternative)

Here’s What You Do:
Cook the biscuits according to the package instructions. Press down on the biscuits slightly. Preheat a pan sprayed with nonstick over medium to medium high heat. Whisk together the eggs and a dash of milk. Break up the pieces of the Laughing Cow Cheese and then stir it in to the egg mixture. Really use your fork to blend it well. Season the mixture with your favorite seasoning. Pour into the pan and let it set slightly. Then fold it over and add the spinach to the other side of the pan until it starts to wilt. Then mix the spinach with the eggs and finish cooking. Divide the egg mixture into four and season with salt and pepper. Spread Best Life Spread on the inside of the biscuits and then form a sandwich using two biscuits and the eggs in the middle.

Kid Tip:
I served them the eggs and the biscuit separately, but if you have older kids give this a try. They just may like them.
