Oh la la!

These are GOOD. I love anything Buffalo and I think if my kids weren’t eating these I would have added more Frank’s Red Hot, but this ratio was perfect as it was– sweet with a tang an not too spicy for the kiddos.
You know what was hot?
The Murder Mystery that we went to see a couple of weeks ago for my mom’s birthday put on by the Murder Mystery Company.

You sit at big round tables (kind of like at a wedding) and the whole thing takes place in front of you–and sometimes right at your table! We were lucky to be sitting with one of the suspects-Lemme Tinkle ;) .

There was a 50′s prom theme where the guy announcing the prom king and queen keels over and kicks the bucket. We had to decide as a table (based on interviewing the ”suspects” and clues they gave) who had the motive and the opportunity for murder.

 We laughed-hard.
The actors were funny.
The story linewas  entertaining.

And it was something different than just the usual dinner and a movie.
We had a great and memorable time.
The food was mediocre, but aren’t all buffets?

And obviously I didn't shy away from the fried chicken! ;)

Here’s What You Need: (Meal for two or appetizers for 4)
1lb small wings (I prefer Smart Chicken)
3 TBS honey
3 TBS Frank’s Red Hot
1/2 tsp minced garlic
1-2 tsp worcestire sauce
Extra virgin olive oil

Here’s What You Do:
Mix the wings with olive oil and salt and pepper and marinate for 30 minutes or up to overnight . Preheat the oven to 400. Remove the wings and add toss them with all the other ingredients and add them to a baking sheet covered in parchment paper. Bake the wings for  20 minutes.  Take out and stir them to make sure they are coated well in the sauce. Lower the oven to 350 and bake for 15-20 minutes more or until cooked through. Finger lickin’good-seriously!

Kid Tip:
My five year old was literally fighting off his dad to eat as many of these as possible. Next time I will for sure double the recipe!

Can you say Craziness?!

That was December-all of it.
Full of fun, laughter, inspiration and craziness.
Andy and I took a little getaway to Puerto Rico and had so much fun in the sun, in the jungle and strolling down the cobblestone streets of Viejo San Juan. We came back to a complete whirlwind-my birthday, a new puppy, a trip to Minnesota, hosting Christmas Eve and travelling for Christmas.

Needless to say by the last week of December I had no groceries except those vegetables sturdy enough to survive the month. Sometimes an empty fridge is a perfect inspiration for a new dish. I pulled out my favorite stapel (Laughing Cow cheese!) along with zucchini, carrots, and onions and Voila! This Creamy Veggie Stuffed Shells Casserole was born.

It was so good I ate it three different times.

Here’s What You Do:

 Here’s What You Need:
Jumbo shells (about 1/2 box =15)
1 large zucchini, chopped roughly; 1 large carrot, chopped roughly; 1/2 a large sweet onion, chopped roughly
1 tsp garlic salt
1/2 tsp Penzey’s Mural of Flavor*
1/4 tsp pepper
4 wedges Laughing Cow Light Swiss
Extra virgin olive oil
Good quality marinara (Tomato basil)
Italian Blend Shredded Cheese

Here’s What You Do:
Preheat the oven to 350. Cook shells according to package directions al dente and set aside. Drizzle a pan with evoo and heat over medium high. Meanwhile quickly pulse the carrot, zucchini and onion in a food processor. (Or chop very finely). Add to the pan along with the seasonings and heat for 3-4 minutes or until the veggies start to soften. Stir in the Laughing Cow wedges to coat. Spray a pyrex baking pan with organic non-stick spray and carefully stuff the shells. Pour the marinara gently over the top to coat (about 3/4 of the jar). Sprinkle lightly with the cheese. Bake covered for 20 minutes. Uncover and bake for 10 minutes more. If you like it more golden brown, feel free to broil 1-2 minutes. Season with salt and pepper and a dash of parmesan. Yum!

*I love this salt free seasoning with a unique, light dillish flavor, but in a pinch you can substitute any other favorite seasoning blend you have.

Kid Tip:
I admit, this was not one my boys were excited to try–something different after all! But, once my four year old tried it, he really liked it. I cut it into pieces for him and added a good dollop of parmesan, of course!

home, of course I gave a resounding, “YES!” First, because I adore her blog (www.rachelcooks.com)

I decided to share this yummy salad because I remember after I had kids
everyone came bearing casseroles. Don’t get me wrong I really, really
appreciated them. But let’s face it, I didn’t want to look six months pregnant
anymore so the three layered meat lasagnas though tasty, were not helping my
cause. I sent Andy to the grocery store to load up on fresh fruit and greens!

Did I tell you that when my friends and I went for lunch the other day we couldn’t find parking spots because there were so many people trying to park at the gym next store?

I hate to say this, but I think by mid February there will be plenty of spaces ;) !

When you make healthy eating taste good, you start to crave it. When you start cutting out the junk and processed food you, crave them less and less. I truly belive you can train your body and your mind to actually prefer healthy eating over unhealthy eating.
Why not start tomorrow morning?

Just giving yourself that affirmation is half the battle. And really, we don’t have anything without our health.

Super Smoothie
Here’s What You Need:(Serves 1)
1/3 cup frozen peaches
1/3 cup frozen pineapple
1 cup ff milk*
1 cup of baby spinach
1 tsp of flax*
1/2-1 tsp of agave or honey (optional)

Here’s What You Do:
Add everything to the blender and blend. Voila! Oh–Add it to a fancy cup and you will feel so much better about eating flax + spinach!

Notes: Skip putting juice into smoothies. It addes unnecessary sugar or if it is a lighter version, some kind of artificial sweetener. Instead opt for ff milk for added calcium..
If you haven’t heard of flax, it’s a wonder food. I suprisingly found this whole flaxseed at Marshalls,but any health food store will have it too. It’s heavy on fiber, Omega-3′s, cancer fighting properties and protein. It lowers LDL cholestrol and helps reduce inflamation.

Bree: Your jars are obviously very cute, but what makes the pickles themselves so special?
Aly: Our pickles are made using a secret family recipe that has been handed down to the women in our family for over 5 generations. Lynnae was a part of the recipe by birth, and Aly waited 7 years (until she married Lynnae’s brother DJ) until she was let in on the family secret! Our pickles are uniquely flavored and are made using only the highest quality ingredients. “Mrs. Pickles” is our secret family recipe, which is our original sweet and sour dill. The spin-off of Grandma Toots’ old favorite is “Hot Mama”, which is our original sweet and sour dill with a kick of jalapeno, now our bestseller!  Bree: Did you feel strongly about using all natural ingredients?Why?
Aly: Absolutely. We have always used all natural ingredients when making them with family, and when we started the business that was something we were not willing to compromise on. We ensure that every batch has the same authentic flavor, crunch and straightforward ingredients that helped us to first establish our business.

Bree: Where are the pickles manufactured?
Aly: We have pickled all over the place! When we first started out, we were renting commercial kitchens around our city, lugging our canning materials in and out each day. Within 6 months, we were able to purchase a small commercial kitchen. Since then, we have grown out of the kitchen and have started to rent out a larger facility that has the proper canning tools/machinery to increase our volume to grow even more. Who knows where we will be pickling next!

Bree: What’s been your biggest hurdle so far?
Aly: The biggest hurdle so far for us has been growing too quickly. Each day is a new adventure with new challenges. When we were still pickling in our small kitchen, we were starting to get orders we just couldn’t produce fast enough. We have really been learning along the way. Neither of us has a background in food and taken quite a leap of faith by quitting our full-time jobs this past year to focus on the growth of our business. What we have learned though, is that we can do what we put our minds and time towards,  (with the help of multiple to-do lists!) to achieve our ever-changing immediate and focused long-term goals.

Proudest moment?
Aly: Our proudest moment will always be the first time we walked into a store and saw our pickles on the shelves! Really, each time we see our jar on the shelf it is assurance that we are on the right path and that customers are supporting us. We wouldn’t be where we are without our loyal customers, and there is nothing we love more than meeting them. At events or at store demos, we love hearing about how our customers use our pickles, how refreshing our “all natural” approach is, or just how much they love the flavors! Our business always comes back to how we started, as a family, and we are lucky to be able to share our family tradition with families around the nation.

Bree: How do you juggle being moms, wives, friends, business owners?!
Aly: Life balance is something we talk about and work on daily. We set goals together once a month, and are both clear on where we want our personal lives and business to be both now and in the future. Since we are sisters-in-law, business partners, and friends we are able to confide and rely on one another in all aspects of life. We have been blessed to share this journey, and are able to divide and conquer. Our business and family lives often intermingle, and creating schedules and timelines has helped us to enjoy owning a business even more. We have even had time lately to hit to gym together…now that is a benefit! Each day we have to consciously choose “what is most important TODAY”, and follow it rigorously. Whether that is to commit to 8 hours at the office, or work from home to get the 5 loads of laundry and endless dishes done in between phone conferences and paperwork, we do what is needed. Recognizing the amount of time you will need to start a business and then prioritizing other aspects of life is a juggling act, but can be accomplished.

Bree: What advice would you give a mom who wanted to start a new business?
Aly: Starting a business comes with amazing benefits as well as plenty of challenges. We quickly realized that the ups and downs are normal and not to give up on our end goal. It is so important to stay creative and to never get complacent in where your business is. There is always something more you can be doing (which is both a blessing and a curse when you have a family!) to take it to the next level.  Owning your own business revolves around being faithful in sowing seeds and eventually reaping the harvest, even if you can’t see an immediate reward.

I think many of you know that I have had the opportunity to cook on  my local Fox Network on a few occasions.
Here’s the most recent one.
And I have to say I love, love, love it! It is probably my favorite thing I am doing right now. Since public speaking was always my favorite class, it’s probably not that big of a shocker to see how much I have loved t.v. I have been crossing my fingers it will turn into something more permanent.

Italian Dinner Starter

 In the meantime, when I received two emails in one day about this show and a casting call in Chicago, I had to jump on it! I drove down to Chicago for a casting call and was asked back for a formal audition. Hardest interview of my life btw! And now, I am patiently (okay impatiently) waiting until the end of November to find out if I have made it on. Since people from Chicago, L.A., NYC, Atlanta, and Austin are all competing for spots, I know my chances are probably slim but I do think the Dinner Starters are a great product that busy moms across America would thank me for if they landed on their grocery store shelves! ;)

NEW-Mexican Dinner Starter!

The morning of the audition (I stayed in a hotel the night before) it was 80 in Chicago which is beyond brilliant for a late October day. I strolled down Michigan Avenue, grabbed a beloved Jamba Juice and headed to the Corner Bakery where I ordered a Avocado and Spinach Panini, which sounded fabulous, but frankly, kind of sucked. So, I created my own and in my opinion, it kicks the Corner Bakery’s version in the bootie. I hope you think so too…

PS–Can you cross your fingers for me?!

Here’s What You Need: (serves 1)
2 pieces of hearty bread
ff milk
1 egg
Salt + Pepper
Handful of baby spinach
1/2-1 wedge Laughing Cow Cheese (I used the Veggie)
1/2 ripe avocado
Best Life Spread of Extra Virgin Olive Oil

Here’s What You Do:
Preheat your panini maker*. Whisk the egg with a dash of the milk and season with s+p. Spray a pan with non-stick and heat over medium heat. Pour the egg mixture out so it lies flat like you would an omelette. Once it starts to set. Add in the Laughing Cow and fold it over for another minute. Spread the avocado with a thick knife on one side of the bread and season with s+p. Top with the spinach, followed by the egg and the 2nd piece of bread. Spread evoo or the butter spread on the top side of the panini and cook in the panini maker for about five minutes.
*If you do not have a panini maker heat a grill pan and add the sandwich with another heavy pan on the top to create the great grill marks. Flip half way through cooking.

Kid Tip:
I would say give it a try to serve it as is, but if your kids turn up their noses I suggest mixing the spinach right into the egg instead of putting it on the sandwich raw.

Gosh I wish I could go back and tell me pre-child self so many things.

To stroll leisurely through the grocery store, to stay in bed reading a book, to sip coffee reading the paper in silence, to go to the movies every weekend, to enjoy going to the bathrom without interruption, to make complicated Bon Apetit meals sipping glasses of red wine…

To use my frickin’ time better.

I mean seriously.

Who KNEW that alone time would become such a scarcity, such a treasure?

Don’t get me wrong, I would not trade my pride and joys for all the tea in China, but I don’t think there is a mom out there that wouldn’t say that she treasures those snippets of silence.

I had a whole night to myself in my own house  while Andy returned home from Hayward, WI with the boys. I left the house ridiculously messy, I worked way past 5pm, I watched the Real Housewives of New York, I read the third 50 Shades book guitlessly for an hour, and I made myself  this awesome Indian-inspired dish-Famer’s Market Rogan Josh. Which I adored. (Andy’s not a huge Indian fan)

What is Rogan Josh?
Not sure exactly, but I was listening to NPR on my own 5 hour trek home from Hayward and they were interviewing a woman about her Lamb Rogan Josh. The spices sounded interesting, so this Farmer’s Market Rogan Josh was made up by me!

Here’s What You Need: (For 4 but made selfishly just for 1!)
*Feel free to swap in different vegetables.
1 large yellow onion, diced
1 large garlic clove, minced
1 cup(ish) chopped red potatoes
1 med/small egglant chopped roughly
2 large tomatoes, chopped roughly
1/4 tsp each cinnamon, paprika, chile powder
1 jalapeno, de-seeded and chopped finely (optional)
1/2 tsp each salt and curry powder
Organic chicken broth (1.5 cups divided)
EVOO
Handful of baby spinach, chopped
Toppings: Cilantro, ff plain Greek yogurt (optional)

Here’s What You Do:
Drizzle evoo in the pan over med-high heat and add the onions, potatoes, the garlic and the spices, stirring for about 5 minutes.
Add in the eggplant, tomatoes, and about 3/4 cup of broth. Stir well. Cover and heat for about 10 minutes on medium. Add jalapeno and cook for 10 more minutes, covered. Add more broth if needed (up to 1/2 cup) and cook for8  minutes and then stir in the spinach and cook for about 2 minutes more. Serve over rice* and top with yogurt and/or cilantro.

*I used the Tasty Bite Microwaveable Ginger Lentil which really was a great flavor combination. If you can’t find it, feel free to use Basmati.

Kid Tip:
Of course you already know my kids were not here! However, if I were to make this, I would serve the potatoes apart and then stir the veggies very small into the rice and add naan and yogurt for dipping.

Circus.

A complete and utter circus.

That is what is going on at our house as the sun dips into they sky and my boys think the party is just getting started.
Fresh from baths, full with their evening snacks, and relaxed with several stories, one would think they would be ready to go to sleep. But, nope…
They keep coming out and coming out of their rooms. One after the other. For hours…I am not kidding.
I have begged. I have pleaded. I have set up rewards. I have dolled out consequences.

And NOTHING works.

Did I mention, I have even tried driving down bumpy country roads in hopes that they will fall asleep?

Please, please send me some sage advice on how to keep my boys in their beds?
For now, however, I am drinking my own Ice Coffee in an effort to stay awake….

Oh—and eating my very favorite, easy breakfast to boot.

Here’s What You Need Ice Coffee:
1 cup of brewed coffee (I like to use a flavored kind like coconut or french toast from Keurig)
3/4 -1 cup of skim milk
½ cup of ice
¼-1/4 tsp of vanilla
Cinnamon (I love the good kind from Penzey’s)

Here’s What You Do:
Chill the coffee in the fridge or briefly in the freezer. Blend everything together less the cinnamon, which you can use as a dash on top. Sit back, and wake up!

Here’s What You Need My Favorite Easy Breakfast:
1 piece of hearty whole grain breaded, toasted
½ of a ripe avocado
Extra virgin olive oil
Sea salt + black pepper
½ of a small ripe tomato, sliced

Here’s What You Do:
Smash the avocado and then spread it onto the toast. Top with the sliced tomatoes and season generously with salt and pepper and drizzle lightly with EVOO.

Kid Tip:
Try the toast with the avocado* (My kids hate tomatoes –a trait inherited from their daddy!)

The Skinny on Avocados:

  • Monounsaturated fat (Ie: the good kind that lowers bad cholestoral levels)
  • Tons of Vitamin E (Immune booster and great for the skin and heart)
  • Lutein (Great for protecting eye health)

Bree: Hi Cat! Tell us all about you. Where are you from? What was your life like prior to Sinless Cocktails? Where do you live now?
Cat: I was born and raised here in Atlanta, GA. Before Sinless I was busy studying to get into Medical School.

Bree: How did you decide to create Sinless Cocktails?
Cat: It was really a joke that turned into a business! Me and my girlfriends were complaining one night that margaritas had way too many calories and that there needs to be a good tasting and healthy option for low calorie cocktails. I mentioned the idea to my husband and created a recipe…and we haven’t stopped since! 

Bree: What I love most about these cocktail mixes is how truly natural they are. Why was that important for you?
Cat: Way before we started Sinless, we have been into natural and truly health food. My husband used to own a Health Foods store before Sinless so we knew about the benefits of real natural ingredients and stevia long before it became mainstream. So for us, it is just a way of living. And we decided early on that, if we wouldn’t drink our own mixes, we shouldn’t even make them!

Bree: Where do you source the ingredients from and where is your factory?
Cat: We get all of our ingredients as locally as possible and manufacture, package and ship our products all from our factory here just North of Atlanta. We do everything in house and I still hand make every batch.

Bree: Tell us, what is it like to work side by side with your husband?
Cat: At times it can definitely be hard and stressful. The biggest issue is turning “business partner” off and “spouse” on. But at other times it can be so fun and rewarding that I wouldn’t have it any other way!

Bree: What are some other tips you have to live a healthy lifestyle?
Cat: Do something every day! With work, it is easy to get overwhelmed and too busy, so I just try to make sure that I do something, anything, everyday! 

Bree: What is your favorite dish to serve with your favorite sinless cocktail?
Cat: Mexican food is our absolute favorite! Which, thinking about it now, was probably the reason we made a margarita mix first. Just so we had an excuse to eat more Mexican Food! And this isn’t a “dish”, but I am absolutely obsessed with chips and salsa. And nothing goes better with that than a Sinless Margarita ;) .

Bree: I have a great vision of making Tequila shrimp with the Margarita Mix!What’s the most creative way you have seen the mixes used?
Cat: Oh there have been all sorts of things we have seen! A lot of people drink them virgin as a lemonade, all sorts of different drink recipes that people have created, but probably the most surprising is that we have quite a few restaurants that use our mix as a base to make salad dressings and marinades.

I remember onece reading an interview with Rachael Ray and the author asked her if she was ever at a lost for new recipes and she acted rather shocked by the question, claiming that she is always inspired so she’s never at a loss for a new recipe.
I admit, on the other hand, that I occassionally think, “What if I can’t come up with anything new and exciting for my next recipe?” And yet, the second I think that it’s true, inspiration finds me as well. Whether it’s in my dreams, on tv, at a restaurant or in this case, in an ad Papa Murphy’s had featuring their version of Taco Pizza.

Here’s my version for Taco Pizza. (Pretty sure it’s skinnier too!…)

Here’s What You Need:
Pre-made Pizza Crust (I used Boboli Wheat)
14oz can organic black beans*
Low fat Mexican blend cheese or Jack Cheese
Big handful of cilantro, diced
Salsa (Whatever all natural kind is your favorite is fine. I used Archer Farms Organic Cilantro)
½ lb ground turkey
Chopped black olives
1 large or two small ripe tomatoes, chopped
2-3 TBS of Taco Seasoning (I use Penzey’s Bold Taco which has no msg)
Extra virgin olive oil

*You could also sub in refried black beans or ff refried beans.

Here’s What You Do:
Preheat the oven according to the package instructions. Using a potato masher, mash up about ¾ of the beans. (You can add a dash of extra virgin olive oil if you want to smooth it up). Save the extra ¼ of the beans for another recipe. Spread the beans on the crust, leaving a small border. Meanwhile cook the ground turkey along with the spices according to the directions. (I halved the water since I was using 1/2lb of turkey instead of a whole pound) Spread the cheese over the top of the pizza scattering black olives and tomato pieces evenly. Top with the ground turkey and place dollops of salsa across the pizza and bake according to the package directions. (Again, you could drizzle lightly with EVOO if you like) Season with extra S+P if you think it needs it and then generously add the cilantro topping.

Kid Tip:
I have a few ideas here…you can take the toppings and add it into quesadillas or top nachos with it. You can also leave off some of the ingredients and basically have the turkey and cheese pizza for your kids’ portion.
