When I was a kid my mom always made nachos.
For me.
For my brother.
For friends who came over.
It was, for lack of a better term, her signature snack.

One of my good friends still talks about the “special black pepper” on my mom’s nachos.
Back in the day that meant gold old salty chips, lots of cheese, loads of sour cream and “special black pepper”.
I have also taken on the love of nachos.
So has my husband.
And so have our boys.
So, I have tried to healthy them  up a bit.

Here are my healthier Nacho tips!

Chips: Limit to the serving size listed on the bag (usually ten chips); Go for all natural and even better whole wheat or whole grain
Cheese: Swap in low-fat cheddar and simply use less
Sour Cream: Swap in ff Greek Yogurt and a good dash of hot sauce
Add in “healthy stuff!” -Roll baby spinach and cut it into strips, top with black olives, and add in fresh tomatoes or avocados. Black beans would add in fiber too. Even grilled zucchini cut into bits would be great.
And…Don’t forget the dash of black pepper-aka special pepper!

Kid Tip:
Pile on the healthy stuff, top with cheese and then microwave so that the healthy bits are hidden under the cheese :)

    What a great idea! Nachos are really no different than having tacos for dinner, if you limit the chip serving and top them with all kinds of healthy stuff! But they’re so fun :)
