I franchised  my business in 2007,

and

I could have never imagined

The legal, financial, and emotional complications involved.
(Despite a year of intense research)

So…as much as McDonalds gets a bad wrap, they must get credit for being a incredible business model.
You can order a cheeseburger in Seoul, in Mexico City, in Milwaukee, and they are all the same-same one pickle same cheese-everything.
Now that is some serious quality control.

One thing I think that McDonalds doesn’t quite get is that food doesn’t need to be salty, fattening, and greasy to taste good.

In fact, I am pretty sure my Healthier Egg McMuffin kicks McDonald’s booty….

Here’s What You Need: (For 1 but easily doubled, quadrupled, etc.)
1 egg
1 egg white
FF milk
1 TBS shredded sharp cheddar
1 Whole Wheat English Muffin (I  used Country Hearth)
1 piece of Deli ham
1 tsp of butter alternative (Like Best Life Spread)
Salt + Pepper

Here’s What You Do:
Put the English Muffin in the toaster. Spray pan with non-stick and heat over medium. Whisk the eggs together along with ff milk (about 1-2 TBS). Season with Salt and Pepper. Add to pan until is starts to set slightly and then add cheese and take a spatula to fold in the ends. Continue cooking until done (It should only take a couple of minutes). At the same time add the piece of the ham to the pan and cook on each side briefly, about a minute. Spread the butter on the English muffin. Top with the egg and ham to make the sandwich.

Kid Tip: If your kids do not like breakfast sandwiches, you can simply give them scrambled eggs with ham and then serve  the English muffin on the side.

I make these for breakfast often, however, I see no reason to add the butter alternative at all. I love it, so quick & easy!
