Meat and potatoes girl….

 I am not. 

However, about once a month I indulge in some red meat, and with summer officially upon us, a “real” burger is an order.

With all the lower fat beef options that are out there, it is easy to have a burger once in a while without breaking the fat bank.

For these Black & Blue Burgers I used 96% fat beef, which is just 4.5 grams of fat per 40z.

Not bad at all, my friends, not bad at all.

And of course stuffed with Laughing Cow Light Blue Cheese they taste indulgent, but they are not. The cheese wedges are 1.5 grams fat each and you only need ½ of one per burger.

Can I get a woo woo!?

Happy Summer! (I am happy as a clam it’s summer-Can you tell?!)

Here’s What You Need: (4 burgers)
1lb 96% lean ground beef
Laughing Cow Light Blue Cheese Wedges (2, cut in half)
Crumbled Blue Cheese
Plain ff Greek Yogurt
Whole wheat buns
Lettuce, tomatoes (optional)
Seasoned Salt + Pepper
Red pepper flakes (optional)
1 TBS extra virgin olive oil
1 TBS Worcester sauce
½ tsp minced garlic

Here’s What You Do:
Preheat the grill or a grill pan with a drizzle of olive oil to medium high. (Preheat the oven to broil if using a grill pan.) Stir the evoo, garlic, olive oil and Worcester into the meat and using your hands blend it together and then divide into four even size balls. Open each “ball” and stuff it with a ½ a wedge of Laughing Cow Blue Cheese and then form into patties. (Try to be sure the cheese is completely covered with the meat.) Grill about 6 minutes per side. Meanwhile, open the buns and toast them on the grill or in the broiler for about 2 minutes. Create the blue cheese sauce with about 1 TBS of yogurt, a dash of red pepper flakes, a dash of seasoned salt and one tsp of blue cheese crumbles per burger. Add a dash of black pepper if you would like too. Top the burgers with the sauce and the tomatoes and lettuce.

Kid Tip:
Sometimes I write my kid tips after I have failed. This is a perfect example! I tried giving my boys the blue cheese version. Next time I would skip the blue cheese for them and give them organic ketchup for dipping. Lesson. Learned.

      I agree-Burgers are nice for an occassional treat–especially when you can feel a bit less guilty about them! ;)
