I remember onece reading an interview with Rachael Ray and the author asked her if she was ever at a lost for new recipes and she acted rather shocked by the question, claiming that she is always inspired so she’s never at a loss for a new recipe.
I admit, on the other hand, that I occassionally think, “What if I can’t come up with anything new and exciting for my next recipe?” And yet, the second I think that it’s true, inspiration finds me as well. Whether it’s in my dreams, on tv, at a restaurant or in this case, in an ad Papa Murphy’s had featuring their version of Taco Pizza.
Here’s my version for Taco Pizza. (Pretty sure it’s skinnier too!…)
Here’s What You Need:
Pre-made Pizza Crust (I used Boboli Wheat)
14oz can organic black beans*
Low fat Mexican blend cheese or Jack Cheese
Big handful of cilantro, diced
Salsa (Whatever all natural kind is your favorite is fine. I used Archer Farms Organic Cilantro)
½ lb ground turkey
Chopped black olives
1 large or two small ripe tomatoes, chopped
2-3 TBS of Taco Seasoning (I use Penzey’s Bold Taco which has no msg)
Extra virgin olive oil
*You could also sub in refried black beans or ff refried beans.
Here’s What You Do:
Preheat the oven according to the package instructions. Using a potato masher, mash up about ¾ of the beans. (You can add a dash of extra virgin olive oil if you want to smooth it up). Save the extra ¼ of the beans for another recipe. Spread the beans on the crust, leaving a small border. Meanwhile cook the ground turkey along with the spices according to the directions. (I halved the water since I was using 1/2lb of turkey instead of a whole pound) Spread the cheese over the top of the pizza scattering black olives and tomato pieces evenly. Top with the ground turkey and place dollops of salsa across the pizza and bake according to the package directions. (Again, you could drizzle lightly with EVOO if you like) Season with extra S+P if you think it needs it and then generously add the cilantro topping.
Kid Tip:
I have a few ideas here…you can take the toppings and add it into quesadillas or top nachos with it. You can also leave off some of the ingredients and basically have the turkey and cheese pizza for your kids’ portion.
