A complete and utter circus.
That is what is going on at our house as the sun dips into they sky and my boys think the party is just getting started.
Fresh from baths, full with their evening snacks, and relaxed with several stories, one would think they would be ready to go to sleep. But, nope…
They keep coming out and coming out of their rooms. One after the other. For hours…I am not kidding.
I have begged. I have pleaded. I have set up rewards. I have dolled out consequences.
And NOTHING works.
Did I mention, I have even tried driving down bumpy country roads in hopes that they will fall asleep?
Please, please send me some sage advice on how to keep my boys in their beds?
For now, however, I am drinking my own Ice Coffee in an effort to stay awake….
Oh—and eating my very favorite, easy breakfast to boot.
Here’s What You Need Ice Coffee:
1 cup of brewed coffee (I like to use a flavored kind like coconut or french toast from Keurig)
3/4 -1 cup of skim milk
½ cup of ice
¼-1/4 tsp of vanilla
Cinnamon (I love the good kind from Penzey’s)
Here’s What You Do:
Chill the coffee in the fridge or briefly in the freezer. Blend everything together less the cinnamon, which you can use as a dash on top. Sit back, and wake up!
Here’s What You Need My Favorite Easy Breakfast:
1 piece of hearty whole grain breaded, toasted
½ of a ripe avocado
Extra virgin olive oil
Sea salt + black pepper
½ of a small ripe tomato, sliced

Here’s What You Do:
Smash the avocado and then spread it onto the toast. Top with the sliced tomatoes and season generously with salt and pepper and drizzle lightly with EVOO.
Kid Tip:
Try the toast with the avocado* (My kids hate tomatoes –a trait inherited from their daddy!)
The Skinny on Avocados:
- Monounsaturated fat (Ie: the good kind that lowers bad cholestoral levels)
- Tons of Vitamin E (Immune booster and great for the skin and heart)
- Lutein (Great for protecting eye health)

I LOVE LOVE this for breakfast too! I make it all the time and it’s such a great way to start your day. These days I’ve been eating it as a late afternoon pick me up with plenty of lemon juice. It’s also great with sliced radishes when I don’t have tomatoes. That’s one refreshing iced coffee!

I LOVE seedy whole grain bread with tomato and cream cheese – but avacado would be so much better!!!!

Not going to lie before I saw your post I have been planning on making my version of the avocado on toast for my blog. Great minds think alike
I also like to make an ice coffee that almost mirrors yours except it doesn’t look as pretty. How did you get it to look so frothy on top? Yum!
Too funny! I put everything in the blender and then spooned the frothy part over the top!

I also sympathize with your plight of getting kids to bed….whoever said the bath to bed routine should last 20 minutes hasn’t been at my house!

I always forget to add cinnamon to my iced coffee, I picked up a roasted cinnamon that I just love. That breakfast is the bomb!!!! I’ve even had it for dinner when my husband is out of town
Sorry about the kiddos not staying in the bed issues. I’ve had my share, sigh, I don’t know what to tell you. Not sure on their ages but I got to the point where I told them they could stay awake only if they were reading a book in bed, they usually fell asleep in their own pretty quickly. Good luck with that!!

I’m totally hooked on avocado toast right now! Though I side with your kids + husband on the anti-tomato bandwagon, for the most part. I’ve also topped mine with scrambled egg whites, or use hummus when I’m out of avocados!

Ooo, I am definitely going to have to try that iced coffee! And that’s one of my favorite breakfasts too…or more like lunch since my child doesn’t let me get around to eating right away.
