Dear Andy,

When you are out of town, I take ridiculously long showers, eeking out every last drop of hot water. I park in your spot (the arguably better one). I leave the laundry in the dryer for days on end. I watch trashy shows on Bravo after the kids go to sleep and fall asleep reading my book with the lights on, encroaching on your side of the bed. I serve and reserve the same meals time and again. I leave multiple purses and shoes out, cluttering things  up guiltlessly. I even leave my robe on the bedroom floor the whole day.  I am a routine nazi with the boys sticking to 6:30 bath times and 7:15 story times. I chastise myself for taking 2 hours to get out of the door in the morning when it takes you 20 minutes.

I vascilate between being bitter you are gone and being grateful it is not me who is always on the road…I miss having a helping hand. I miss having someone to share my day with. I miss the sounds of excited little boys screaching, “Daddy!” as you walk in the door.

So when you are home, I step it up. I make an appetizer for dinner, on a weekday.

Here ya go Babe! ~Mediterranean Flat Bread Here’s What You Need: (Serves about 2-3 but easy to double)

1 piece of flatbread (I love the Garlic one by Archer Farms at Target)
Hummus (I love the Sabra flavored kind)
Chopped bell peppers (preferably organic, two halved of mixed colors=about 1 full)
1 small ripe tomato, chopped
Greek Seasoning (I prefer Penzey’s)
Handful of olives, chopped roughly (Black or kalamata work)
Hanful of chopped feta (You could use the crumbles too)
1 TBS (approx) of chopped mint  or flat leaf parsley
S+P
Extra virgin olive oil

Here’s What You Do:
Preheat the oven to 400. Spread the hummus out on the flatbread and season with Greek Seasoning. Top with the remaining ingredients (less  the fresh herbs) and season with salt and pepper. Drizzle lightly with oil and season with salt and pepper. Bake for about 6 minutes. Sprinkle with either mint or flat leaf parsley. That’ s it! (And isn’t it so pretty?!)

Kid Tip:
Peppers and tomatoes=My 4 year olds most hated ingredients. But, he loves hummus! So giving him carrot sticks and hummus or plain pita and hummus is a very simple trade in.

  3. Awww, Bree that’s such a sweet sentiment behind this gorgeous flatbread, and I love your sense of humor in this “letter” to your hubby, haha! I may not have kids, but I do most of those things too when my husband is away! This flatbread is such a fun excuse to celebrate him being back!
