I love couple friends.—The kind of couple that you both connect so well with that you end up talking over each other across the table because you have so much to say to one another. The ones you laugh with about the stupidest of things and who forgive you for the disjointed conversations you have with children running around your legs. And of course who recognize you when you are all dressed up and childless on a double date. We are blessed to have many of these amazing couple friends. My friend Danyelle is one half of a favorite couple friend of ours. Many a nights we have entertained each other and she shared with me a fabulous Bruschetta Feta Dip that I have tweaked slightly and remade a zillion times. Here it is for you to make and have a fabulous double date!
Here’s What You Need:
Low fat cream cheese (8oz)
Low fat flavored feta (4oz)
Italian Seasoning (I prefer Penzeys)
2 TBS of ff plain yogurt
1 large, ripe tomato chopped and seasoned with salt and pepper
Extra virgin olive oil (about 1 TBS)
Balsamic vinegar (about ½ TBS)
Basil (torn into small pieces, about a handful)
Here’s What You Do:
Pour your friends a drink (!) and then mix the feta, cream cheese, and yogurt in the food processor. Add Italian seasoning to taste and spread along the bottom of a serving dish. Mix the tomatoes with the olive oil and vinegar and toss evenly over the cream cheese mixture. Top with the shredded basil and salt and pepper . Serve with whole wheat crackers or pieces of fresh hearty bread.
