Anyway…a few weeks ago I hosted our annual franchise meeting in Cancun. (Seriously, we did work ;)!). Since we are a small company, my co-worker and I shared a room. This meant we had a lot of together time. (Which I don’t mind, because I really like her.) We got to talking food (big surprise!) and she was telling me how much she loves comfort food. I have never been much of a comfort food person mainly because I am not a fan of heavy foods, but I know that most of America has a serious love with all things comfort. She got my wheels turning and this Easy Bake A La Mexicana was born.It is creamy comfort in a skinny dish.
How did I do Lindsey?!
Here’s What You Need:
1 lb ground turkey
1 cup of frozen veggie mix (I like Archer Farms from Target Southwest-Inspired Corn and Black bean)*
1.5 cups of mild salsa
3 wedges of Laughing Cow Queso Fresco and Chipotle)
1 TBS Taco Seasoning (I like Penzey’s)
2 cups of uncooked whole wheat penne cooked according to package directions al dente
Low-fat Four Cheese Mexican blend
Optional toppings (cilantro, fresh tomatoes, plain greek yogurt)
Here’s What You Do:
Preheat the oven to 400. Preheat a pan coated with organic non-stick over medium high and start browning the turkey slightly. Add in the salsa, vegetables and the cheese and let simmer about 10 minutes. Pour in the cooked pasta. Pour the mixture into a 11×7 pan coated with non-stick and top lightly with the Mexican cheese blend. Bake for about 10 minutes and stir around. You won’t believe how awesomely creamy it is with the Laughing Cow cheese! Top with diced fresh tomatoes and cilantro and a dollop of plain yogurt. Season with S+P.
Kind of like fancy mac n cheese, so this shouldn’t be too hard of a sell. (Though I did need to pick out all the peppers for my four year old…)
