I love frittatas, but what toddler is going to get excited about a frittata? Not mine. But, a cupcake? They can get excited about that. My Breakfast Cupcakes are basically mini frittatas in cupcake liners. They were a big hit with my kids and I loved that I could eat them all week while running out the door in the morning. (Microwave for 30 seconds.) This makes 9, but can be easily doubled.

Here’s What You Need:
6 eggs
9 cupcake liners (You may want to double them to make them sturdier)
4 TBS ff milk
1 TBS low fat flavored cream cheese
1 TBS shredded cheddar
1/2 cup diced ham (or any other light deli meat)
1/2 cup diced tomatoes
Handful of baby spinach cut into strips
Salt and pepper

Here’s What You Do:
Preheat the oven to 375. Spray the cupcake liners with non-stick cooking spray. Whisk the eggs and add in the remaining ingredients, being sure to stir everything in well. Season with salt and pepper. Ladle into cupcake liners about 3/4 full. Bake for approximately 25 minutes.

Kid Tip:
“Yummy mommy. Thank you.” Really? Okay, that means this is a kid hit! A few suggestions-Get your kids involved. My three year old helped me make these from start to finish which is probably why he was so excited about them. Also, feel free to adapt the meat and vegetables to what your kids like best.
